Mexico's essence is the same as that of the heaped dishes of food served up by the locals: very colourful, full of unique flavour, and deliciously spicy. Help yourself to the sparkling waters of Cancún or the lush vegetation of Mexico's tropical rainforests.

If your tastes run to history Mexico has ancient Mayan ruins to plunder dating back to 500 B.C and for those with a more adventurous palate try Copper Canyon, this picturesque destination, where the background and the sunset melt into one, is ripe for exploring on horseback or on foot (or using your hands, hanging off the red rock canyon itself.). After hot days of red scenery, jungles and spices wash the dust and sand away with a frozen margarita and be re-energised by perky music as Mexico's nightlife takes over.
